Dr. Ray Peat's Carrot Salad Recipe

Raw #carrots are a very special type of healing food! They contain insoluble fibre (binds to toxins rather than being digested) which helps reduce not only #endotoxins but the reabsorption of estrogen in the gut. This is extremely supportive for anyone with estrogen dominance, gut dysbiosis and/or #liver congestion. Most women have an excess amount of estrogen (could be in the tissue of blood work says low estrogen) in relation to progesterone.
Carrots are also are high in #potassium which is one of the minerals most of us are deficient in. Potassium is regulated by your thyroid gland and helps sensitize your cells to thyroid hormone. Therefore, low potassium can lead to lower utilization of #thyroid hormone which is needed for all of your sex hormones and regulates every other system.

Ingredients:
1-2 large shredded carrots
1 tbsp raw apple cider vinegar (with the mother)
1 tbsp coconut oil (unrefined or refined)
Himalayan sea salt and garlic (optional) to taste
The high saturated fat combined with acetic acid of the vinegar increases the effects of the carrot fibres. The type of fibre in carrots is different from leafy and cruciferous vegetables.Those ones can sit in the gut and putrefy if #digestion is too slow which can cause issues like #leakygut and bacterial overgrowths. But carrots contain #antifungal and #antimicrobial properties that bind to toxins in the intestines and absorb and excrete endotoxins (bad bacteria). This is not to say other #vegetables are bad but it’s something to be aware of.
This is what makes raw carrots such an amazing pro-metabolic vegetable! I like making a big batch of this salad at the beginning of each week and adding it on top of my meals! So tasty and easy!

Cái mình thích nữa là thanh menu để chỗ dễ thấy, bấm qua lại vài mục cũng mượt, không bị vòng vèo. Nói chung chỉ cần lướt vài phút là hiểu…
